- Oaxaca: Oaxaca is the main producer of mezcal in Mexico and has a long tradition of making this drink. In this state, mezcals are produced mainly with the agave Espadín, Tobalá, Tobaziche, Coyote, and other varieties.
- Durango: In Durango, mezcal is produced mainly with Cenizo agave, although other varieties such as Mexican agave and Durangensis agave can also be found.
- San Luis Potosí: In San Luis Potosí, mezcal is produced primarily from Salmiana agave, a wild variety that grows in the semi-arid region of the central highlands of Mexico.
- Zacatecas: In Zacatecas, mezcals are produced mainly with Durangensis agave, although other varieties such as Salmiana agave and Mexican agave can also be found.
- Michoacán: In Michoacán, mezcal is also produced mainly with Cupreata agave.
